BluesLifter Ice Cream Syrup
Well, the dog days of summer are finally here, and with a vengeance! As you are probably aware, July is National Ice Cream Month, and July 21st is National Ice Cream Day! What a great way to say "STICK IT, SUMMER!", sitting back with a gallon of your favorite ice cream and eating it all before it even has a chance to get soft. I'm sure we're on the same page here.
If you're like me, though, after a little bit of summer, you start to get just a tad tired of regular ice cream. It just doesn't quite get you to where you need to go anymore, maybe even making you a little nauseous. Or a lot nauseous. And yet you still have a lot of summer to go! This is an unacceptable situation.
Fear not! We here at The Old-Time Vinegar Company have your back! Introducing the BluesLifter Vinegar Syrup! Make this simple recipe and I guarantee that you'll be back on the ice cream train in no time! It adds such a delicious, acidic zip to your favorite cone or bowl, you'll never want to go back to plain ice cream again.
Here it is, as quick and as easy as can be:
Ingredients:
1/2 cup Coffee Blues Beer Vinegar
1/2 cup Cane Sugar
1/4 cup Heavy Whipping Cream*
1/2 tsp Cardamom powder
1 Star Anise
*If you're not into dairy, I would suggest substituting almond or soy milk, but not coconut milk. Coconut milk tends to be a bit oilier, and that oil can separate out.
Instructions:
Put all the ingredients in a small pot and bring them to a boil. It might look like the cream curdles because of the vinegar, but it doesn't - just keep heating it and stirring it through. After it boils, reduce heat and simmer until the sauce coats the back of a spoon and begins to thread as it drips about 10-15 minutes. Drizzle it over the top of your favorite pint, gallon, or 5-gallon bucket of ice cream. We really like it over a nice French Vanilla.
